The old gauges had wires to a harness, which became very complex. A modern harness could be uncorrodable fiber from the sensor, with a laser counter shining down the same fiber with a small solar cell sealed in the sensor for power to a laser aggregator with a line to the CPU/dash where the data is displayed. Separate small screens tasked to a set of sensors could work, possibly meaning a smaller main display. Displays are cheap, so I can see some potential. I see many Chinese as well as Japanese ecars with smaller screens - hard to say how it will settle?
