Basically, what you need is a lot of weight, that's all. No heat, no catalysts, reagents, emulsifiers etc. In theory, you could make it at home, but you'd need a certain setup like a millstone or two and a team of pack animals or half a dozen strong young men to turn it. But that's how it's made anyway: press olives, collect oil. Which is, I suppose, why it's considered one of the best quality oils you can get and as far as can be from ultra-processed stuff like hydrogenated vegetable fats and the like.
