In the US a of our food safety practices are set very strict to compensate for unsanitary industrial agriculture practices. We just expect eggs to be filthy so we wash off the outer shell unlike Europe and Japan where eggs can sit at room temp. So this guy who eats locally from known farms is a lot safer eating raw food. On the other hand its never 100% as even Japan occasionally has salmonella outbreaks from chicken sashimi, and US raw milk farms occasionally have listeria out breaks.
