I know exactly what you mean. I tried installing PIL and OpenCV a while back on my MBP and it was completely frustrating with all the different problems I was running into. Finally gave up, installed Ubuntu on a VM, and synced my dev files on OS X with my dev environment with Dropbox. Ran all my code on in my Ubuntu VM just fine. Some things I love OS X for, other things I leave to Linux because they're still much much easier to develop for.
