A New Way to Cook Pasta?
- jfengel 5y agoI do this all the time, following Harold McGee's suggestion years ago. The advice to shut the burner off is novel, though. I'll have to give that a try. I usually set it to medium, and I believe it'll work turned off with a cover. But I'd amend his advice on spaghetti. With a wide, flat skillet you can bring water to a boil fast, and still fit spaghetti in it. With thin spaghetti, and using a separate kettle to boil some of the water, I can have pasta ready in five minutes from walking in the door. (And that water is perfect for cacio e pepe.)
