uBlock Origin has been broken on macOS since Safari 13 / macOS Catalina [1].
If they ever get the port to work on a newer version of Safari, it could work on iOS.

I looked at it at the time but sadly the Content Blocker API that Apple released is incredibly crippling compared to the feature set of uBlock Origin. Basically, you can onlly generate lists of domains that you want to block, package that in (multiple !) batches of 50k (at the time I think) and let Safari do the blocking for you. This removes the ability to do anything non-static basically, which is where uBlock Origin really shines, so I don't expect anyone to make a meaningful port anytime soon, sadly.
