(Also underaged drinking is a lot less intensely prosecuted than underaged porn) Usually they don't have any direct relationship with the stores at all and their card processing goes through another company that provides the machines and access to the MC/Visa/et al payment processing, that's how it was with my family's stores at least when we started taking cards, the machines all came through another company and our contract was with them.
