6c/12t 64gb NUC with 1tb nvme drive works very nicely. I have offsite NAS but the nuc has a thunderbolt 3 port for a raid array or 10 GB ethernet if needed. With KVM on Ubuntu 21 zfs root pretty much covers most of these home lab uses. Have a Linux workstation that also does gpu pass through for windows gaming. Use a physical Kvm to switch between hosts. Really hard to justify a rack these days
