The cloud kitchen concept in its current state is cancerous, flooding delivery and pickup apps with dozens (hundreds?) of fake locations serving subpar, overpriced food. Don't even get me started on how places like Applebees are also jumping on this to serve subpar, overpriced meals with false images/advertising (check out the subreddit for delivery drivers, one Applebees can run up to two-three ghost kitchens).
It's adversarial for local, family owned business AND the final output is frankly, quite bad. If the argument here is that these are venues for 'local and minority owned businesses', then the obvious reply is that reasonably dense food halls and centers are already successful i.e. Bow Market in Somerville, MA or some of the Asian food courts in California. You _don't need_ 30 indistinguishable restaurants in one locale flipping frozen meals.
My bet is that someone is going to end up getting killed by one of these due to allergens.
