Such nonsense, beyond just enforceability, it is also silly&lazy™ beaucracy. This clause exists because admins don't want IP to be abused/leaked, but they don't want the headache of actually determining what work would break contract and what work is completely unrelated.
Personal anacdote: this clause was used against me by school admins to prevent me from taking my research work with me to another university. I wrote a _nice_ letter to the legal department, pointing out to them thier cost of trying to enforce this, while also having little evidence to show my work is monetarily valuable. After a phone call with one of the lawyers, the IP was released to me. School admins were not informed; seeing the shock in their faces when I told them was priceless.
