If you're not into fiddling but you still want a nice rolling release, you can try an Arch based distro. I use Manjaro and it's been nothing but smooth sailing for a few years now. I have it on 4 machines - a home desktop, a work desktop, a laptop and an old Mac Pro from 2012.
