If non-newtonian mortar and bricks are too complex for robots, it's ok. We did not come up with mechanical horses, did we? We came up with automobiles. Let the robots build houses in their own radically different ways: for example, 3D printing on site. Or anything else, really. Don't let's just get obsessed with bricks in particular.
