Default file associations can programmatically be retrieved and applied through DISM:
Dism.exe /Online /Export-DefaultAppAssociations:C:\Users\Foo\MyAssociations.xml
Dism.exe /Online /Import-DefaultAppAssociations:C:\Users\Foo\MyAssociations.xml
You might need to run it as administrator for it to work.
