Do we need to talk about 'ultra-processed food'? [audio]
- open-source-ux 5y agoWhat is ultra-processed food (UPF)? In the programme, professor Gyorgy Scrinis of the University of Melbourne say it is: - Food that is broken down to it's component parts or chemically transformed, subject to high pressure or temperature and may be lacking nutritional value. - We mistakenly think UPF is only junk fund e.g. fast food or confectionery. But it can be foods like breakfast cereals where grains have been highly processed and where the integrity of the food is destroyed. - Ingredient labels on food packets, jars or tins aren't always helpful because the labels don't tell you how some ingredients were processed. If you wouldn't use the ingredient in your kitchen, then consider whether the food should be treated as a UPF.
