Now days, professional photos should be RAW as SD cards can fit a hell of a lot of storage on, and RAW provides so much flexability to change things like the white balance etc so I always shoot in RAW with a DSLR then post process the images. It takes time but the images look better then they would have then before.
RAW is not for everyone though.
