Interesting, as there was an article linked either from HN or Pocket about how a lot of "gas is better for cooking" was deliberate advertising campaigns:

- GravitasFailure 5y agoWhile there certainly has been advertising by the gas industry, the only people I've met that said they preferred electric over gas were home cooks using inductions stoves, and pretty nice ones at that.
- gruez 5y agoBut if it's actually better for cooking (eg. response time), why should we care?
- philips 5y agoInduction has immediate response time as well. I use both at home and I don’t think response time is a huge issue. The two things that stop us from removing the gas all together: - A few pans that we haven’t replaced with induction compatible ones - The gas stove came with the house and works OK If the house hadn’t come with gas induction would be fine with us- works great.

I used an induction stove a few years ago at a short-term vacation rental, and it could only toggle between on/off. If I set it at 50% power, it would cycle between being on and off, rather than staying on 100% of the time but at 50% power. My non-induction electric stove does the same thing. Is this an issue that is solved with higher end models?
- philips 5y agoThe cheap Ikea one we got does have lots of power levels from caramelize onions low to rolling boil high.
