I went down this route as well and am the happiest I've been when it comes to managing dependencies and creating builds. I ended up taking it one step further because Apple kept breaking my hypervisor (xhyve) with every new macOS release. I built a new workstation that runs NixOS and wayland/sway. I still have my MacBook Pro for when I need macOS comforts or if I don't feel like being at my desk I can just SSH into the workstation.
