Yes, we do keep the versions of the software but if there are changes in the database layer (eg collection schema or validations, etc), then there is no point in restoring to the older version as it will bring inconsistency in the platform.
For all the UI changes, you can have as many versions as you want and can always revert back to any older version.
On-site deployment can happen only when you are able to extract the code and host it on the clients machine/cloud. The price point we are looking at ($25-$200 per month) will not make it us a viable option to manage the third party infra.
Hence thinking to build it in a way so that the user can take the code and host it themselves, but then they cannot import it back in the builder/our platform.
