The problem is formatting. If I put two tabs between each column in a text document but then on some row I need to write a sentence then my tabbed table in the text document is going to be harder to read. And no, those would absolutely not be easier to use when you're just writing down observations or keeping a log of something like blood pressure. Also, they're not really mixed together. I'm just thinking of a tab being a table in it, not mixing tables and text in one document.
