I think that at best interviews correlate with candidate performance but most of the information is gained at the earliest stages of the interview, and as you progress further, the process becomes less and less informative. I'd suspect a success rate of 50-60% - meaning you don't regret the hire and the hire didn't leave - is probably quite good.
