It's really about the speed here. I have one that takes ~6 seconds to stabilize, which is by no means bad but is still a noticeable pause. The Thermapen is rated at 3 seconds, which I imagine feels much better when you quickly want to get the temperature of a steak or something while preparing other components at the same time.
