High speed cameras produce significantly more output data, which makes them more expensive I'd have to imagine. Not to mention a high speed camera misaligned on the finish is going to produce similarly skewed results. Anything not happening exactly along the optical axis is getting distorted by perspective. At least a line camera doesn't pretend to have accurate information on anything except the line you aim it at.
