While there is some software capable of using postscript as a serialization format (eg Xcircuit, I'm not sure how it does it but my guess is that the side affect of some of the functions is to create drawing elements) that would be way harder to work with. Think about all the problems Javascript creates, now imagine dealing with them is necessary just to extract the page content.
