How hard it is to connect even the first generation bike to a watch or heart rate monitor is ridiculous to the point that I’ve never figured it out. It seems confirmed impossible with an Apple Watch; supposedly it’s possible with other brands but was prohibitively difficult with my Garmin. Agree that this is short sighted and a game they can’t win. My watch works perfectly fine for me without being connected to the bike; they lose for not ingesting my heart rate data.
