I have quit a job over things I considered overly intrusive, but a lot of people don't have that freedom. For that matter, I now keep a separate work phone. My employer doesn't require anything I object to, but just keeping all work apps off my phone was one consideration when I got it. But that's a big expense for a lot of people.
