I simply don't believe we wouldn't be risking harm to the environment or farming (which also means harm to the environment) by cutting back on bee production. Honey is just flavoured sugar water. So it shouldn't be technically hard to replace. Arguably that's what jam does. The Chinese had some bumper crops when they hand pollinated after the bees went missing. Which allows super pesticide use which also helps I guess.
