I work for a university press and virtually all of our manuscripts come in as Word docs, but most of our books are indeed in humanities, most are not esp. math intensive. BUt now even Word can handle math markup well enough for say, an economics text. We occasionally get LaTex files, and it is difficult to integrate into our design workflow, they have to be handled completely separately.
