I've watched a completely non-IT person work with both vanilla Gnome 3 and Windows 10; they found the former far more intuitive and unobtrusive (not looking at the individual apps, just the basic desktop UI). Proprietary design-by-committee doesn't necessary make for better solutions: hence the numerous complaints recently from people (often with accessibility issues) trying to book vaccination slots on government websites.
