Wouldn't this just create a whole new set of privacy concerns if you're having random people MITM your traffic? Even if it's encrypted, I feel like someone smarter than me would figure out how to do bad things with this.

Yeah that’s the main challenge. With TLS in theory it shouldn’t matter but not all pages are served with https. Managing self signed certificates would also be an issue.
