People had to go to wars because you could get death penalty for treason (if you refuse to serve your empire, kingdom etc.) The things you are talking about were opportunistic, wars were always started by rulers motivated by expansionism and not by ordinary people motivated by greed and lust. And yea all wars had mercenaries but they were minority not majority of the army.
