Impressed by the amount of data found in my Google takeout

I'm shocked! I removed everything from my gmail/google account about year ago: I left it on 'cause of I am not 100% sure I can remove my email (maybe left in some other places, some banks... ). I just entered it again and found a lot of new privacy settings... and a lot of my old data :( I did the take out and .... boom... a whole bunch of my data popped up... a LOT ... I'm soooo mad... we'll do again what I did in the past.. I will remove little by little everything... but, one consideration did this data appears just because I am in Europe and google had to do it because of the EU GDPR privacy law?

(and I try to remove data now, and I get: "error: cannot remove now, try later", sounds like what I experienced years ago when I spend 10 days removing my facebook data)
