There's XPrivacy framework that runs on top of Magisk or XPosed (not sure how it works now). I remember it allowed you to give very fine-grained permissions to apps and poison the data as well, with fake contacts, location, etc. Back in the day it required a lot of tinkering to set it up, and would likely make your OS pretty unstable.
