I'd continue to work on your business with whatever materials you have on hand. Maybe you can sell your domain and LLC to this guy to cut some of the losses, but even if not just tell him it will take two months to take care of the paperwork. If he is a total dick and still sues, just shut down your company like you were planning on anyway. In exchange for being unreasonable, this guy will have paid a bunch of money to sue a company that no longer exists, and alienated the holder of the exact-match domain for his business in the process.
