Sulfites have been in use since the dawn of recorded history, so there are probably few significant secrets to discover there. I'm hopeful we'll get somewhere with nitrites. The whole celery salt dodge feels like the first step of a slow process to find something better, or perhaps figure out how to counter the nitrosamines.
