I think it means toast is "basically burnt seed mush" I'd be curious about the coffee studies compared to how people consume coffee. So many people seem to drink theirs with a lot of cream and sugar.

Burnt rotted seed mush, even! The yeast fermentation step is essentially a controlled spoilage. And the result remains delicious.
