You can't really grow "on demand", since it takes at bare minimum 3 weeks (for lettuce) from seed to harvest.
- JoeAltmaier 6y agoThat's close enough. Fresh local lettuce in winter in most northern climates becomes possible, if you can predict demand a score of days into the future.
