No different from anyone else creating a resume. Your businesses had names. You did things in those businesses. Put that info in your resume. If they are only asking for a resume then that resume isn't likely to hold much weight. More likely it's simply going to be a reference sheet for use with the interview. When I have been asked for a resume I just update my LinkedIn profile and export it as a PDF (it's pretty much in resume format.)
