How do you do your stripe integration with your own application?

While stripe has this super good dashboard for you to utilize.. I know that your application ultimately should not be hard-dependent on 3rd party applications and thus you should be creating your own transaction entity, payment entity; to track your application's payment processes. But just how much should entities should you be creating on your own application side when you are integrating with Stripe? Would love to gather some thoughts on this.
