My theory is that culturally enforced typing is self perpetuating due to a collective action problem. I would absolutely stop tipping, but all I'd be doing is screwing a waiter out of their pay. The only way to end it, is if we all collectively decided to stop the practice so that waiters could negotiate a real wage.
