I hate to rain on the parade, especially because it is a very neat project. But..the reason you dont want mechanical buttons, or dials for that matter is for cleaning. When it comes to food safety, every nook and cranny that can trap grease or raw liquids from spills or splashes is a no no. Nice idea but not very practical.
