To what extent does this apply to iCloud mail?

  To the full extent? I would even go so far to not take your technical skills seriously for many jobs if you can't even admin a small VM for your private email. Companies with this lack of skill are even worse, don't care about their or their customers' privacy and lack the skills...

    I ran my own mail servers for 30 years. I punted on this earlier this year. Best to not take folks like me seriously, then.

        Yes. Everything is hosted now.

          Where are you hosting it? I'm looking for a good solution to move my domain off of Google Apps. I haven't really found a good alternative. I was looking at Protonmail until I noticed just how much money they charge per account.

            Try Fastmail. Their mail service just works.
