You're right, we have no idea what is being put our food in the kitchen but the restaurant has for many years possibly tried to establish its brand and reputation as a trustworthy establishment, one idiot with nothing to lose could ruin it. Why would they be willing to take the risk if it does not affect their bottom line or save the customer scrilla?
