I don't think legitimizing magical thinking is going to help here in the short term (gaining their trust) or long term (improving their mental health). You don't have to understand it or pretend to understand. This is about amenably resolving a hostile work environment and so its best not to veer off course. I would focus on finding resources to keep this employee housed during off hours so they can leave instead of having fits in front of their colleagues.
