Slack's bloat may be the developer's fault, but the same could be said about Atom, and Discord, and Evernote, and Skype. And even if you can't say it about VSCode itself, you can certainly say it once you introduce a handful of extensions. Electron isn't the problem. All of the technologies it is built on are the problem. They require extreme measures to control quality and maintain performance for anything larger than a trivial crud app.
