The original meaning of embedded has pretty much lost its meaning outside electronics engineering. I remember being taught that an embedded system has a microprocessor inside while it might not be readily apparent to the end user. It can be argued that nowadays many if not most electronic devices contain one and the user may assume so by default.
I've seen a wide range of devices being marketed as embedded, from the truly low-power microcontrollers using one lithium battery's worth of energy over its lifetime up to a PC with a fast x64 processor in a signage system.
