There may be a lot of room for first-mover type projects. There probably isn't room in the market for a lot of aidungeons, and in that case, having the first well known GPT-for-X could be very valuable. Having said that, I am also in the nervous-of-building-a-business-around-someone-elses-api camp. It's just that sometimes things don't work out in the straight-forward way described - the fact that anyone could make a 1 million dollar homepage or a facebook clone (or my personal bugbear, ebay) very cheaply doesn't necessarily cause much competition for the first one that got popular.
