From the technical point of view, Mullvad was one of the first VPN services to adopt and support the development of Wireguard; it was also one of the first to open-source all of its client-side code. From the privacy point of view, Mullvad doesn't ask for an email address, accepts payments in cash, publicly states the full names of all the people behind the company, and doesn't pay any affiliate commissions.
