When I do it, anymore I refuse to do it with standard partitions. LVM makes this whole setup much more painless in the end since you can nearly endlessly change the splits without dealing with copying and moving partitions around when a change is needed. I wouldn't recommend thin provisioning for this kind of setup though since it carries some burdens when things fill up.
