Will it gracefully degrade automatically to a slower speed if the cable isn't up to snuff, or will it just not work?

  In normal circumstances it should degrade just like 1Gbps to 100Mbps.

    In that case it does seem like there's no reason to keep anything at 2.5 because of compatibility.
