Is there a server-side filter that would kill these mails before they get sent to the device?

  Good question, I'd expect it would be possible to add that to the Apple e-mail servers and automatically protect every version of iOS.

      Yes, a lot of people do. However, as you indirectly point out, this would not be a real fix because presumably most people do not use Apple's servers for their email.

        If Apple, Google, and Microsoft could catch these in-transit it would prevent a very large number of attacks. (And 100% of the devices I'm responsible for.)
